Strawberry Ice Lollies

Cool down the yummy way with this delicious treat.

Makes: 8 ice lollies
Preparation time: 20 minutes, plus freezing time
You’ll need:
  • 500g strawberries, rinsed
  • 200g sugar
  • 250ml water
  • 8 sucker sticks

  1. Place the strawberries in a blender and whiz until smooth.
  2. Put the sugar in water in a pot and stir over mild heat until it has dissolved. Bring to the boil and simmer for five minutes. Allow to cool.
  3. Mix 180ml of the cooled sugar syrup with the strawberry puree, pour it into ice lolly moulds and put a stick in it to freeze.
Tip: You can select a variety of fruit to make your ice lollies – mango, berries, apricots, peaches and litchis are all suitable.
